Mocha pancakes

For the pancakes:
One scoop mocha flavour protein powder
One scoop rolled oats
1 egg
A small handful of blueberries
Half a ripe banana
Half a teaspoon of coconut oil

For the topping:
Greek yoghurt
Beetroot powder

1. Heat the coconut oil in a frying pan
2. Blitz the rest of the pancake ingredients until it’s a smooth batter
3. Pour a small ladle of mixture into the pan, cook for about a minute then flip and cook for another minute
4. Repeat!
5. Pile up your pancakes and add a dollop of greek yoghurt, some blueberries and a sprinkle of beetroot powder
