Paneer stir fry


One pack paneer

One red pepper

One portobello mushroom

Half a pack of tenderstem broccoli

Half a red onion

Four garlic cloves crushed (I like it garlicky!)

Two spring onions

Soy sauce

Extra virgin olive oil

Chilli sauce (I used Frank’s)

Chillies / chilli powder

Salt and pepper


1. Chop paneer into cubes and marinate in crushed garlic paste, soy sauce and chilli sauce. If you have time, marinate for 20-30 minutes. I only had 15 minutes to spare!

2. Heat the olive oil in a wok. Stir fry the paneer on a medium heat for around 5 minutes

3. Add the sliced red onion

4. When the onions start to soften, add the sliced mushroom

5. Give it a good stir and after a few minutes, add the chopped broccoli (stems and all!)

6. After a few more minutes, add the sliced red pepper and chopped spring onion. I like to add these last to keep them slightly crunchy

7. Season with salt, pepper, chillies / chilli powder and a splash more soy sauce

8. Stir fry for a few minutes until everything is thoroughly mixed together

9. Take a photo, post on Instagram with #cookieandbela then eat, enjoy and watch your Insta likes roll in!
