Protein Pancakes Recipe

For the pancakes:
One scoop protein powder (you can use any flavour, I used white chocolate)
One scoop rolled oats
1 egg
A small handful of blueberries
Half a ripe banana
Half a teaspoon of coconut oil

For the topping:
Raspberries
Greek yoghurt
Maple syrup
Sprinkles

1. Heat the coconut oil in a frying pan
2. Blitz the rest of the pancake ingredients until it’s a smooth batter
3. Pour a ladle of mixture into the pan, cook for about a minute then flip and cook for another minute
4. Repeat!
5. Pile up your pancakes and add a dollop of greek yoghurt, drizzle on some maple syrup, add some fresh raspberries and sprinkles

Tip: For double chocolate chip pancakes, use chocolate protein powder and swap the blueberries and raspberries for white and dark chocolate chips. You won’t need maple syrup or sprinkles for this version as they will be sweet enough!
